Melt 25g (1oz) butter in a large pan. Take off the heat, add fruit, orange zest and juice, sauce and spice. Use a stick blender to chop and mix ingredients together a little. Leave to stand for 30 minutes.

Rub remaining butter into flour and add sugar. Mix in 3-4 tablespoons cold water with a knife to make pastry. Knead lightly to a smooth cylinder.

Roll out pastry thinly in 2 batches between sheets of clingfilm. Cut out 12 x 6.5cm (2½in) rounds with a plain pastry cutter. Put them into 12 holes of a patty tin.

Fill each with 2 teaspoons fruit mix. Re-roll trimmings and cut out 12 x 5.5cm (2in) rounds or star shapes. Or rounds with star holes as per photograph. Press gently on top.

Chill pies while oven heats to 200°C/180°fan/Gas 6. Bake for 25 minutes. Sprinkle with caster sugar to serve.

Use ordinary plain flour if you don’t have a gluten intolerance.

I found the mince pies I mentioned in my request last year which i bought were edible, should be for the price, but looking at the ingredients on the packing , one needed to be a scientist to make them. I have tried pastry many times and found it to be a waste.
I have tried and tried to make gluten free pastry, it is like cardboard, never successful at all. I have just paid £4.49 for 4 mince pies, very nice, made by Denise in Ireland,lots of different ingredients, these are very nice, but would like very much to make my own, Is there any way to find out a proper edible pastry that we can use that you know of.I think Prue Leith has had problems too. We have several in the family who are celiac, so it would be a help to find a good recipe.
