Pumpkin or butternut squash 500g (1lb 2oz), peeled and roughly chopped
Potato 1, peeled and roughly chopped
Butter 50g (2oz)
Soy sauce 3-4 tbsp
Spring onions 2-3, trimmed and finely sliced
Sesame seeds 1 tbsp, toasted
Sausages and cabbage wedges or broccoli to serve (optional)
Instructions

Put sweet potato, squash and potato in a large pan, cover with water and bring to the boil. Reduce heat and simmer for 20 minutes until softened.

Drain vegetables well, then tip them back into pan. Dry over a high heat for 30 seconds, then add butter and soy sauce and mash until smooth. Season with freshly ground black pepper.

Stir in half the spring onions. Scatter mash with sesame seeds and remaining spring onions. Serve with sausages and cabbage wedges or broccoli, if you like.
