Apple, orange, lemon and pear 1 of each, cored and sliced

Instructions

Put fruits into a non-reactive pan, add sugar, cinnamon stick and 600ml (1 pint) of water. Heat gently for 20–25 minutes, or until the fruits are very soft.

Place a non-reactive sieve over a large bowl, then pour fruits into the sieve and allow them to drain. Gently press down on the fruits to extract all of the juice but do not pass the pulp through the sieve.

Pour strained juice back into the pan. Add apple juice and sliced fruits and heat gently until hot, but not boiling. Serve juice and sliced fruit in heat-resistant glasses or mugs.
