First make the salsa. Wash and pat dry all the berries. Hull the strawberries and mash with a fork. Crush the raspberries and blackberries lightly with a fork and stir into the strawberries along with the whole blueberries and 1 tablespoon honey. Set aside.

Mix the soft cheese with the cinnamon and the remaining honey until well blended. Set aside.

Just before serving, preheat the grill to hot. Cut the tortillas in half and toast in two batches for a few seconds on each side until lightly golden.

To serve, cut the toasted tortillas in half again and serve with the soft cheese and berry salsa.
Cook’s Tips
Use your favourite combination of fresh berries. For a tropical alternative, mash chopped fresh mango with ripe banana, add a squeeze of lime juice, and mix in pomegranate seeds.
