Slit dates lengthways and remove stones. Thinly slice feta and push a little into each date. Arrange on a serving platter.
Whisk tahini with 1 tablespoon water to loosen; season with salt and freshly ground black pepper. Drizzle tahini mixture over dates, then drizzle with oil and scatter over sesame seeds. Serve at room temperature.
Serve as a party canapé or even as a dinner party dessert. They can be prepared a few hours before serving.
