Feta & Strawberry Salad
A light Feta & Strawberry Salad taken from A Zest for Life cookbook.
Olive oil 2 tbsp
Balsamic vinegar 2 tsp
Red onion ½, peeled and sliced into thin rings
Cucumber ½, quartered, deseeded and sliced
Radishes 4, trimmed and finely sliced
Kalamata olives 10, pitted
Strawberries 200g (7oz), hulled and quartered
Freshly ground black pepper
Mint leaves a good handful
Feta cheese 110g (4oz)
Crusty bread to serve (optional)
Whisk the oil and vinegar together in a large serving bowl. Add the onion, cucumber, radishes, olives and strawberries. Season with black pepper. Set aside for 10 minutes.
Tear most of the mint leaves into the salad and mix gently. Break the Feta into large chunks over the top. Garnish with more mint leaves and serve with your favourite crusty bread if liked.
