A delicious Toasted Tortillas with Berry Salsa recipe taken from A Zest For Life Cookbook.
Ingredients
- Strawberries 175g (6oz)
- Raspberries 50g (2oz)
- Blackberries 50g (2oz)
- Blueberries 75g (3oz)
- Clear honey 2 tbsp
- Low fat soft cheese 200g (7oz)

Ground cinnamon ½ tsp
- Soft flour tortillas 8 mini
Directions
- First make the salsa. Wash and pat dry all the berries. Hull the strawberries and mash with a fork. Crush the raspberries and blackberries lightly with a fork and stir into the strawberries along with the whole blueberries and 1 tablespoon honey. Set aside. Mix the soft cheese with the cinnamon and the remaining honey until well blended. Set aside. Just before serving, preheat the grill to hot. Cut the tortillas in half and toast in two batches for a few seconds on each side until lightly golden. To serve, cut the toasted tortillas in half again and serve with the soft cheese and berry salsa.
