The taste of springtime! Collect clouds of elderflowers from the hedgerows to make this versatile cordial. It's well worth a try as it's so simple to make.
Ingredients
Elderflower heads 20
Caster sugar 1kg
Citric acid 50g
Lemon 1, thinly sliced
Limes 4, thinly sliced
Directions
Gently rinse the elderflowers in a bowl of cold water to remove any insects.
Place the sugar in a bowl, pour in 900ml boiling water and stir until dissolved.
Add the citric acid, elderflowers and citrus slices, then stir. Cover and store in a cool dry place for 6 days.
Place a sieve lined with muslin or a clean J-cloth over a large clean bowl or wide jug. Strain the cordial through the sieve and discard the fruit and flowers.
Pour into sterilised bottles, seal and store in the fridge for up to a year.
