An irresistible recipe for little fussy eaters taken from the Quick After Work Cookbook.
Ingredients
- Vegetable oil 1 tbsp
- Onion 1 small, peeled and finely chopped
- Garlic 1 clove, peeled and finely chopped
- Carrot 1 large, peeled and grated
- Lean minced beef 500g (1lb 2oz)
- Chopped tomatoes 400g can
- Tomato ketchup 2 tbsp, plus extra to serve
- Beef stock cube 1

Cucumber ¼

Wholemeal rolls or hot dog rolls 4-8, dependent on size
Directions
- Heat the oil in a large frying pan and fry the onion and garlic with about half the carrot and the beef for 5 minutes until the beef is browned all over
- Stir in the tomatoes and ketchup. Crumble in the stock cube, bring to the boil and simmer for 20 minutes, stirring occasionally, until thick
- Meanwhile, grate the cucumber and mix with the remaining carrot
- To serve, slice the rolls down the centre and open out. Spoon over the meat sauce. Serve immediately with carrot and cucumber sprinkled on top, and with extra ketchup
