A festive recipe from Four Seasons Cookbook to use up ripe pears with a kick of ginger ale. This makes a great welcome drink for your guests, try elderflower instead of rum to make a non-alcoholic version.
Ingredients
- Ripe pears 3, peeled and cored

Lemon ½, juice only
- Ice 2 handfuls

Traditional ginger beer 300ml (½ pint), chilled
- Spiced rum 75ml (3fl oz)

Directions
Chop 2½ pears into cubes and place in a blender with the lemon juice and a handful of ice. Whizz until smooth.
- Set a sieve over a large measuring jug and push the mixture through the sieve, discarding the pulp.
- Stir in the ginger beer and rum, then taste, adding more rum or ginger beer if you like.
Thinly slice the remaining ½ pear and pop into two gin glasses along with some ice. Pour in the pear cocktail and serve immediately.
