Elderflower and Mint Iced Tea

A delicious and refreshing Elderflower and Mint Iced Tea taken from the Dairy Diary.
Ingredients
- Darjeeling teabags 4
- Fresh mint 1 bunch
- Elderflower cordial 225ml (8fl oz)
- Ice cubes to serve

Lemon ½, finely grated zest
Directions
Place teabags and half the mint in a teapot and pour over 1 litre (1¾ pints) just-boiled water. Leave to steep for 10 minutes. Remove teabags and mint and allow to cool. Stir in elderflower cordial and pour into 4 glasses. Add ice cubes and a mint sprig to each with a little lemon zest.
