Filled with a mix of lemony soft cheese and fresh blueberries, these little puff pastries cook quickly and efficiently in an air fryer, making them an ideal sweet treat for last-minute entertaining or a snack with a cup of tea.
Ingredients

Full fat soft cheese 50g (2oz)

Egg 1 medium, separated

Lemon curd 25g (1oz)

Plain flour for dusting

Puff pastry 200g (7oz)

Fresh blueberries 65g (2½oz), plus extra to serve

Granulated sugar 2 tsp

Cream or ice cream to serve
Directions
Put the soft cheese in a bowl and mix in the egg yolk and lemon curd. Set aside.
On a lightly floured surface, roll out the pastry to make a neat 24cm (9½in) square. Cut into four smaller squares.
Spoon a quarter of the lemon cheese mixture in the centre of each pastry square and sprinkle with a few blueberries.
Lightly beat the egg white and brush lightly round the edges of the pastry. Fold over to make triangular turnovers and press the edges together with the prongs of a fork to seal. Slash the tops with a sharp knife and brush with egg white; sprinkle lightly with the sugar.
Line the air fryer basket with baking paper and arrange the turnovers, spaced a little apart inside. You may need to cook them in batches, depending on the size of the basket.
Air-fry at 180°C, setting the timer to 20 minutes. After 15 minutes, carefully turn the pastries over to cook the bases, then continue to cook until golden and puffed.
Place on a wire rack to cool for about 15 minutes. Serve warm with ice cream and extra blueberries.
Recipe Note
Tips: Replace the lemon curd with your favourite jam if preferred and use other small berries or chopped fruit instead of blueberries. If you don’t have an air fryer, preheat the oven to 200°C/180°fan/Gas 6 and bake the turnovers on a baking sheet lined with baking paper for about 30 minutes or until golden.
