Ingredients
- Wholewheat plain flour 225g (8oz)
- Baking powder 2 tsp
- Light brown sugar 110g (4oz)
- Berry granola 110g (4oz), crushed, plus extra to sprinkle
- Egg 1 medium, beaten
- Sunflower oil 125ml (4fl oz)
- Whole milk 200ml (7fl oz)
- Ripe banana 1 large, peeled and mashed
- Vanilla extract 1 tsp
- Blueberries 150g (5oz)
Directions
Preheat the oven to 190°C/170°fan/Gas 5. Line a 12-hole muffin tin with paper cases. Put the flour and baking powder in a bowl, stir in the sugar and granola, and make a well in the centre. Pour in the egg, oil and milk and mix carefully until you have a thick batter. Stir in the banana, vanilla and blueberries. Divide the mixture between the paper cases (they will be quite full), sprinkle with a little granola and bake for 25-30 minutes until risen and lightly golden. Transfer to a wire rack to cool slightly. Best served warm.
