Clafoutis is a baked French dessert
It is a speciality of the Limousin region. The name is said to come from the Occitan dialect word claufir, meaning to cover or fill. Fruit, traditionally cherries, is arranged in a buttered dish and covered with a thick batter and cooked until only just set. Our recipe from A Zest for Life, uses autumnal fruit instead of cherries and adds a cheeky dash of Calvados. There are more delicious autumnal recipes in this month’s recipe collection.
