Preheat the oven to 220°C/425°F/Gas 7
Roll the pastry out very thinly - just a little thinner than a one penny piece
Using an 8.5cm (3¼in) fluted or plain round cutter, stamp out 24 rounds from the pastry, re-folding and re-rolling the trimmings if necessary
Bake the tarts for 15-20 minutes until well risen, golden brown and feel firm to the touch
