Parma Ham Jackets with Roasted Veg

Large baking potatoes 4

Olive oil 2-3 tbsp

Carrot 1, peeled and cubed

Yellow pepper 1, deseeded and cubed

Courgette 1, cubed

Red onion 1, peeled and sliced

Soured cream 150ml (¼ pint)

Smoked paprika ½ tsp

Lancashire cheese 110g (4oz), crumbled

Spring onion 1, sliced

Parma ham 4 slices

 

1 Preheat oven to 200°C/Gas 6. Rinse and prick potatoes, pat dry and rub with olive oil, salt and pepper. Place on a baking tray and bake for 1-1½ hours.

2 Meanwhile, toss vegetables (except spring onion) in olive oil and season. Bake in oven with potatoes for the last 25 minutes.

3 Mix together soured cream and paprika.

4 Split potatoes open, top with cream, cheese, vegetables, spring onions and Parma ham slices.
