Butter 25g (1oz)
Onion 1 peeled and chopped
Carrot 1 peeled and chopped
Pumpkin 350g (12oz) peeled and roughly chopped
Milk 750ml (1¼ pints)
Salt and freshly ground black pepper
Natural yogurt 150g (5oz) to serve
Dried pumpkin seeds to garnish, optional
1 Melt butter and gently fry onion and carrot for 5 minutes, until softened.
2 Add pumpkin and milk and season to taste.
3 Bring gently to boil.
4 Cover and simmer gently for 30 minutes.
5 Liquidise, then serve hot swirled with natural yogurt and garnished with dried pumpkin seeds, if using.
