Chocolate sauce pudding

An intense chocolate sauce with a fluffy sponge topping

Self-raising flour 175g (6oz), sifted
Cocoa powder 85g (3½oz)
Butter 85g (3½oz)
Golden caster sugar 175g (6oz)
Full fat milk 200ml (7fl oz)
Golden caster sugar 125g (4½oz)
Cocoa powder 25g (1oz)
Boiling water 600ml (1 pint)

1 Preheat the oven to 170ºC/325ºF/Gas 3.

2 Sift the flour and cocoa powder into a bowl and rub in the butter. Stir in the sugar and mix in the milk until smooth (the mix will be quite stiff but it’s meant to be). Spoon into a 1.75 litre (3 pint) ovenproof baking dish and level the surface.

3 Mix together the sugar and cocoa and whisk in the boiling water. Although this sounds odd, pour the cocoa liquid over the pudding and bake for 40–50 minutes or until the top is firm and there is a lovely dark sauce at the bottom.

4 Leave to stand for a minute or two only before serving – the sauce will be absorbed by the fluffy sponge if left to stand for too long.
